SPLASH ZONES
Incidental or accidental food contact surfaces (under cabinet, range top,
salad bar, etc.)
NON-FOOD ZONES
All other areas or exposed surfaces (cooking area)
Materials Requirements:
Materials shall withstand normal wear, penetration of vermin, corrosive
action of food, beverage, cleaning compounds. Shall not import odor, color,
taste or toxic material to the food. Commercial grade, free of visible scale
steel shall be used.
Surface shall be smooth, easily cleanable, and corrosion resistant, or rendered
corrosion resistant with a material which is non-cracking and non-chipping.
Design and Construction:
Shall be fabricated to minimize moisture and dust accumulation, shelter of
vermin and dirt, facilitate inspection, servicing maintenance and cleaning.
Finishing:
Painted finishes maybe used, if they improve sanitation. Paint shall not
chip, blister or peel.
